Spring came late and cold to Little Polissia this year, slowing the wildflowers and delaying the first bloom. When summer arrived it brought warmth, humidity, and the afternoon thunderstorms of a classic Ukrainian season- conditions that rewarded the patient bees with rich and varied forage.
Pavlo harvested twice. First from the forest floor- bilberry, buckthorn, wild pear, wild cherry. Then again as the lime trees came into bloom under the July sun.
The result is a honey of layered floral character. Expect delicate fruit blossom on the nose, a gentle wild cherry sweetness mid-palate, and the clean finish of a summer that took its time to arrive.
Serve chilled in a white wine glass. Pair with soft cheese, charcuterie, or simply good company.
